If you have hunted a animal like bear and wondering what to do with legendary bear pelt, then you are at the right place. I also faced the same confusion when I was a newbie.
1.You can sell it to trapper and make sure that your horse is near the trapper.
If it is away then the game will not show the option to sell it. After selling it then you go to buy option and you will be able to get clothing.
The main benefit of selling to trapper rather than butcher is that now you can buy clothing made by the legendary pelt that you sold like clothing,saddles,garment sets and hats, etc shown in below video.

- Big Valley
- Near left side of Annesburg
- Big valley of West Elizabeth
2.You can donate the pelt to Pearson in beaver hollow as Arthur Morgan and then clicking crafting upgrades.
Now, you can upgrade things like satchel, Arthur's lodging, John's lodging, camp tables, chuckwagon, main campfire and scout campfire.
Bonus: You will also get good blessings from camp members.
3. If you don't wanna do the hustle to go the trapper or camp and you are not interested in unique animal clothing then you can sell the pelt to the butcher in exchange for some money.

4.Just take the hunted animal to the camp and carry it around the camp. You will be amazed to get all the humorous reactions of members.
The reactions will change according to the completion of story and the type of animal.
